Frederick's @ Ormiston House

Leslie Price and Steve Bennett moved to Strahan mid-August 2015 to open their first Tasmanian venture - Bushman’s, which they still own and operate in the centre of town. Always on the lookout for other opportunities, they met the owners of Ormiston House, a grand Federation mansion on the shores of Macquarie Harbour, and discussed the resurrection of Frederick's restaurant, which at that stage, had been lying dormant for more than a decade. Their vision for Frederick’s was simple - refined dining, locally sourced ingredients, Tasmanian.

A lot of work has gone into creating something truly unique on the West Coast. Steve reinstated the kitchen garden, where they grow organic herbs, micro salads, heirloom vegetables and selected native plants with a clear view to provide a garden-to-plate experience. Knowing where your produce comes from is key to this type of dining experience, and Steve is proud to tell you about the providence of each of the ingredients: Dean Hanson their butcher supplies beef and lamb directly from his property in Sassafras; Peter and Una Rockliff supply salmon directly from Macquarie Harbour and wild caught fish from the Southern Ocean; Torsten Schwoch fills their tanks with live crayfish from the pristine waters of the West Coast and Steve forages native plants from land and sea from Macquarie Heads, Henty Dunes, Trial Harbour and surrounding areas.

The premium wine list is 100 per cent Tasmanian and has been specially selected to showcase the best of the best.

Dining at Frederick’s is more than just filling your belly (although you will definitely do that!). It is a dining experience, which offers great food plus intrigue and humour. From the Binjie potatoes, fresh from the kitchen garden, converted to “rocks” dipped in an edible clay that are served with garlic confit aioli and seaweed harvested from Trial Harbour, to the “I’m not sharing” chocolate dessert to finish, each course is a delight and will leave you wishing this was your local restaurant.
