Ritual Coffee was founded in 2008 by Tim and Mel Jarosz, who were joined by roaster Stuart Grant in 2010. Since the beginning it has been something of a tumble-down the-rabbit-hole in search of quality coffee.

The first thing they discovered was that their raw ingredient – green coffee beans – needed to be fresh and of the highest possible quality.

“It’s the same reason a restaurateur doesn’t go trawling the supermarket for their vegies; if we want quality coffee, we need to know where it comes from, how it was grown, and who grew it,” Tim said.

“That’s why we partner with quality-minded producers and suppliers in long-term, mutually beneficial relationships. We pay well for great coffee,” Mel added.

The second thing Ritual focuses on is roasting in a way that showcases the hard work of producer partners. They try to highlight the natural sweetness of a bean – notes of caramel, chocolate or brown sugar, depending on the coffee.

Then there is terroir. Each different region lends its character to the coffees grown there. Beans from the Yirgacheffe region in Southern Ethiopia can have a zesty fruit character; from Nyeri in Kenya they are bright and lively; from San Agustín in Colombia they are sweet and buttery. “Our job as a roaster is simply to unlock these flavours,” Tim said.

“Coffee is about people – from the millions of producers whose livelihoods depend on it, to the millions of coffee drinkers whose palates are thrilled by it every day.
