Emigrating from England with husband Andrew in 1982, Carolyn moved to Redbank farm at Sisters Creek, North West Tasmania in 1986. In 2006, Carolyn purchased Hillfarm, a quality Tasmanian preserves company with over 20 years operating in the industry. This fitted with the longer-term vision to value add to the produce that was grown on the farm.

Hillfarm creates multi-award winning products that showcase fresh, natural Tasmanian ingredients including honey, pepperberries, wasabi, chillies, horseradish and berries. All their products are natural, with no added colours, artificial flavours or preservatives. They are of the highest quality and are HACCP quality assured. The canola and mustard seeds used in the preserves are grown at Redbank farm.

Hillfarm’s range of preserves include mustards, jellies, marmalades, jams, pastes, relishes, vinegars and oils. Christmas puddings are also made under the Naturally Nichols brand. In 2007 Hillfarm Tasmanian Wasabi Mustard won best product in show at the Royal Hobart Fine Food Awards. Hillfarm also produces specialty products for world renowned chefs, including Tetsuya Wakuda and Luke Mangan.

Redbank farm is now run by two of Carolyn’s children. Michael manages the farm where mustard seeds, canola, poppies, carrots, onions, wheat and barley are grown. Tristan manages the hatchery where day old chicks are produced and sent to Nichols Poultry at Sassafras.

Conserving wildlife and it’s habitat and using renewable energy is important at Redbank Farm. In 2012 a wind tower was installed to provide power to the factory and the hatchery. Rebank Farm was awarded the National Landcare award for Primary Production for its ongoing environmental and farming practices.

Carolyn takes pride in the unique premium products she and her dedicated team produces, using a traditional approach to turning quality local produce into flavoursome boutique products.
